Decadent Chocolate Mousse, with sea salt and lime

If you’ve never tried my Decadent Chocolate Mousse before, you’re in for a sweet surprise. This recipe is a favourite with my chocolate-loving friends, they LOVE it!!

Such a great pick-me-up when you’re feeling the pressure, this simple, quick, delicious pud is full of happy goodness.

What
Just six ingredients. Organic silk tofu, raw cacao, vanilla essence, zest and juice of half a lime, a pinch of sea salt, and xylitol, which is the only known sweetener that actively promotes dental health – look it up! It’s derived from the birch tree, it tastes like sugar, and it has multiple health benefits. What’s not to like apart from the name?

Why
Silk tofu provides a beautiful creamy base, and raw cacao adds to the decadence. As well as the flavour, raw cocoa has multiple health benefits, and is high in Iron, Calcium, Magnesium and Potassium. I use Xylitol in place of sugar – it just tastes the same and you use the same amount as you would sugar, no fiddling about with measures.

What
The ingredients we use are simple:
¼ cup Organic Raw cacao powder
¼ cup of Xylitol
2 x 300g cartons of Organic Silken tofu
1tsp of vanilla essence
Juice and zest of 1 lime
1 tsp of sea salt
Fresh berries for toppings or shavings of Vegan dark chocolate.

How
Open the Organic Silken Tofu and drain the excess water, place on a paper towel for at least 10 mins.

Throw the ingredients into a blender or food processor. Do it gently, though, it’s not a sport. Blend until completely smooth, occasionally scraping down the sides. Then pop the mousse into a bowl and chill for an hour, add your toppings, grab your spoon, and Instagram it!
